I got the red velvet recipe from Paula Deen and the ganache + cream cheese recipes from Chockylit. I had to half the original ganache recipe and double the original cream cheese frosting. The measurments shown below reflect this.
Red Velvet Cupcakes
2 1/2 C AP Flour
1 1/2 C sugar
1 Tsp baking soda
1 Tsp salt
1 Tsp cocoa powder (1 Tbsp if you want more cocoa flavour)
1 1/2 C vegetable oil (lots of people said they turned out too oily so I used 1 C veg oil and 1/2 C margarine)
1 C buttermilk, room temp
2 large eggs, room temp
2 Tbs red food colouring (I used a whole bottle which was almost 3 Tbs)
1 Tsp white distilled vinegar
1 Tsp vanilla
Preheat the oven to 350 degrees. Line 2 muffin tins with 24 cupcake liners.
In a medium mixing bowl, sift together the flour, sugar, baking soda, salt and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food colouring, vinegar and vanilla with a handheld electric mixer(you can do this with a whisk, the butter makes this step a bit of a pain). Add sifted dry ingredients and mix until thoroughly combined.
Divide the batter in to the cups. Bake for about 20 - 22 minutes, turning once halfway through. Test with a toothpick and remove to cool on a wire rack.
4 oz bittersweet chocolate (I used ghiradelli chips)
1/2 C heavy cream
1/2 Tsp Vanilla
Pinch of salt
Place chopped chocolate in a heat proof bowl. Heat heavy cream in a sauce pan until bubbles form around the edges. Pour hot cream over chocolate and let sit 1 minute. Mix chocolate and cream together until combined, then add vanilla and salt. Mix until combined. Let sit until it's room temperature and a little thick. Spoon over cooled cupcake tops and smooth with the back of the spoon. Take care if you have nice domes as the ganache will spill over the side. Let sit to harden ganache.
Cream Cheese Frosting
8 oz Philly Cream Cheese
1/2 Stick butter 1/4 C)
4 Cups sifted powdered sugar
2 Tsp vanilla
Beat butter and cream cheese with an electric mixer until smooth. Add powdered sugar a little at a time and vanilla, beat until combined. Pipe on ganache topped cupcakes.
